1. Ras Malai Creme Brulee Recipe
Holi, the festival of colours, is all about going out and letting yourself loose. This Holi, as you continue to dance, sing and revel in the sparks of colours flying all around, do not forget to feed yourself. We understand that entertainment is the most important priority on this festival, but there is no harm in taking a few extra minutes to prepare a lip-smacking dish. So, here are our suggestions that you can try this Holi.
The first one is for the folks who are bad and boujee but want to celebrate the festival. Take or make your favourite Rasmalai and then proceed ahead to make the creme Brulee. Start by beating egg yolks and castor sugar in a bowl, as you bring the cream to a boil in another pan. Now, whisk them together, in parts, until you have a frothy mixture. Pour your mixture in a microwaveable bowl, over the Rasmalai, and allow it to steam-bake completely. When it’s ready, add a good layer of castor sugar and/or brown sugar and burn the upper layer to achieve the sweet and crispy top layer.
3. Polelu or bobbattlu
Yet another must-have Holi foods is Polelu, also known as Bobbattlu and Puranpoli. To make this, start by soaking chana dal for a few hours. Later, add it to a pressure cooker and allow it to cook for four whistles. Meanwhile, take refined and wheat flour and add ghee to it, to form a dough. Cover it with a wet cloth and let it sit. Now, mash the dal into a paste and add jaggery, fennel seeds powder, cardamom powder and some more ghee to make the filling. Keep stirring it to make sure that the ingredients do not stick to the pan. Once you have both of these ready, make smaller portions of the dough and create space to add the dal filling it. Roll them together like chapati and bake in on a pan until its cooked.
4. Mirchi bhajji
A good cup of tea and some Mirchi bhajji on the sides remain a classic combination, even on Holi. To make these, pick the finest green chillies you can and give them a good rinse. Now, make a slit in these chillies and pour in a small amount of cumin powder, salt and lemon juice paste. Take another bowl and add rice flour with gram flour and also add red chilli powder, turmeric powder, asafetida, carom seeds, baking soda and salt. Add water to combine it all into a smooth mixture. Dip the chillies in it and drop them into a deep frying pan with hot oil. Take it out and serve hot.
Last on the list is the simple snack, a chaat. While you can add whatever you like in a chaat, here’s what we suggest. Saute boiled potatoes and transfer them to a bowl when slightly brown. Add chopped onions, chilli powder, cumin powder, chat masala, salt, mint chutney and turmeric paste. Give it a good mix, and add this to your serving bowl. Top it with some sev, yoghurt, and few seeds of a pomegranate.
